Ginger Lemon Jello (vegan, paleo)

How do you stay cool in the summer? Making use of air conditioning or a fan will help keep your environment cool, but you may find yourself feeling warm when leaving home. Traditional Chinese Medicine puts more focus on your internal environment. Yup, you can influence how warm you feel with acupuncture and nutrition. And who doesn’t like a good quality jello in the summer?

The agar and lemon in the jello both have cooling properties. If it’s really warm where you are, you may want to consider skipping the ginger, as it has warmer properties. I personally find that even with the ginger, this jello is very refreshing. As a bonus, this jello comes with anti-inflammatory properties, as long as you don’t have food sensitivities to the ingredients.

Ginger Lemon Jello

Ginger Lemon Jello

Ingredients
2 cups water
1/4 cup maple syrup
2 tbsp lemon juice
1 tsp grated ginger
2 tbsp agar flakes (or reduce to 2 tsp if using agar powder)

Directions
Combine all ingredients in a medium saucepan on medium-high heat. Bring just to a boil and reduce heat to low. Simmer for 5 minutes, stirring occasionally. Then, pour the mixture into your recipient of choice. If you’re serving it to guests, you can pour it into nice individual bowls or fancy cocktail glasses. It will also set nicely if you simply use one large bowl.

Refrigerate it for at least an hour to have it thicken. It won’t be completely cold so if you like your jello really chilled, leave it in longer. It will also thicken a bit more if you refrigerate it for longer than 1 hour. When you’re ready to serve the jello, you can garnish it with fresh fruit for a pop of colour.

Make sure any portions that haven’t been eaten on the same day are stored in an airtight container.
